Place the flour with the baking powder and cold butter pieces from the fridge on a work surface or, if you prefer, in a bowl. Start working the dough; make a hole in the center and add the eggs, sugar, salt, and grated lemon zest.
If the dough sticks too much to your hands, help yourself with a little more flour, if on the contrary, it seems not to combine well, add a little more egg white.
If you wish to make the pastry with a stand mixer, use a leaf hook. Create a dough ball and wrap it in plastic wrap, then let it rest in the fridge for 30 minutes.
After the time has passed, roll out the pastry and line the tartlet molds, but only after greasing and flouring them. Remove the excess pastry and keep it for decoration. Prick the bottom with the tines of a fork.
