After trying braised ribs in slow cooker and pulled pork, I couldn’t miss the recipe for cooking shank in the slow cooker.
For this recipe, I decided to cook the shank with light beer, flavored with herbs and pink pepper. The only step to seal the meat was browning it in oil, then I added the rest of the ingredients, closed the pot, and let it cook.

Ingredients to Make Beer Shank in Slow Cooker
- 2 pork shank
- 1¼ cups light beer
- 2 tbsps extra virgin olive oil
- 1 leaf bay leaf
- 1 sprig rosemary
- 6 berries pink pepper
- 3 pinches salt

Instructions
Pat the pork shanks dry with paper towels to ensure good browning and avoid unnecessary splatter. Pour the oil into the pot, add the 2 pork shanks, and brown on all sides. If using a slow cooker, this step should be done in a skillet. Otherwise, with the multicooker, you can use the dedicated function at 390°F. Turn off the pot or the flame.
Place the shanks in the slow cooker, if you browned them in a skillet, and season with herbs, salt, and pour the beer over them. Toss them in the seasoning and then close the pot.
Set the slow cooker for 5 hours on high.
Serve the pork shank with its gravy and a good side dish.

You can strain the cooking juices, thicken them with a tablespoon of cornstarch over low heat.
