Simple and tasty chicken and zucchini rolls, baked with a flavorful herb breadcrumb coating. Very easy to prepare, they are stuffed with bacon or another cured meat and wrapped with thin slices of zucchini. Perfect for serving at dinner with a nice side of potatoes or vegetables… try them too because they are delicious!

Ingredients
- 10.6 oz chicken breast (sliced)
- 1 zucchini
- 3.5 oz rolled bacon (or another cured meat)
- breadcrumbs
- Grana Padano cheese (to taste)
- herbs
- extra virgin olive oil
- salt
Tools
- Baking tray
- Cutting board
- Toothpicks
- Slicer or mandoline
Preparation
Place the slices of chicken breast on a cutting board and place one or two slices of bacon on each.
Roll up the meat to form a roll (1).
Mix on a plate 2-3 tablespoons of breadcrumbs with some Grana and a handful of herbs (thyme, parsley, rosemary, or a mix to taste).
Coat the rolls in this mixture.
Wash the zucchini and cut it into very thin slices, lengthwise (use a slicer or a mandoline to get an even thickness).
Brush the zucchini with extra virgin olive oil, then also coat them with the flavored breadcrumbs.
Wrap the breaded zucchini slices around the meat rolls and secure everything with toothpicks.
Place the rolls in a baking tray, season with salt and drizzle with a little oil (2).
Put the tray in a fan oven at 375°F and bake for 25-30 minutes, or until the chicken is cooked (3). Adjust the times based on the thickness of the meat slices.
Your chicken and zucchini rolls are ready, serve them hot, accompanied by roasted potatoes or a side of vegetables.
Tips and Notes
You can flavor the breadcrumbs with herbs or spices to taste.
Pound the chicken slices if they are not very thin.
For the filling, you can use bacon, speck, ham, or another cured meat. You can add a piece of scamorza or provolone to taste.
Slice the zucchini thinly, so you can roll them without breaking. If you don’t have a slicer or mandoline, you can use a vegetable peeler.
