Ricotta Cookies. Simple and quick cookies to prepare, perfect for breakfast and snack.
Ricotta cookies are easy and very fast. They are very simple to prepare, in fact you don’t have to roll out the dough and you don’t have to shape them. These cookies are mixed directly in a bowl with the help of a spoon, then you scoop the dough with a spoon and straight into the oven.
They bake quickly and as I told you they are perfect for breakfast and snack. I kept them simple, but you can enrich them with chocolate chips. To flavor them I used vanilla flavoring, but you can use the zest of an untreated lemon or orange.

Ingredients
- 8.8 oz light ricotta
- 1/4 cup sugar
- 1 1/2 cups all-purpose flour
- 1 egg
- 1 1/2 tsp baking powder
- 5 drops vanilla flavor
Tools
- 1 Bowl
- 1 Spoon
- 1 Baking Sheet
- 1 Parchment Paper
How to Make Ricotta Cookies
In a bowl, add the ricotta, sugar, and egg. Stir the mixture with a spoon until it becomes creamy.
Add the flour, baking powder, and vanilla flavor. Continue stirring with a spoon until you obtain a homogeneous mixture.
With the help of two spoons, scoop small amounts of dough and transfer them onto a baking sheet lined with parchment paper. Slightly space the cookies apart. (With this amount, I made 12 cookies, but the number varies depending on how much dough you scoop with the spoon).
Bake in a preheated static oven at 350°F (180°C) and let cook for about 15 minutes. Please check the baking times based on your oven.
Take them out of the oven, let them cool slightly, and if you like, dust with powdered sugar.
