A tasty rustic pie, very simple to make, with leeks, speck, and ricotta… prepared in just a few minutes with the classic puff pastry base, it is tasty and appetizing, perfect to serve as an appetizer. The leeks are briefly stewed in a pan, so they remain soft in the oven without burning, then diced speck and a creamy mixture of ricotta and eggs are added. Ingredients
- 1 roll puff pastry
- 1 leek (about 200 g excluding waste)
- 100 g ricotta cheese
- 1 egg (large)
- 50 g speck
- extra virgin olive oil
- salt
- pepper

Preparation
Wash the leek and cut it into slices, removing the root end and the greener leaves.
Place it in a pan with a drizzle of oil, a pinch of salt, and a splash of water (1).
Cook it for a few minutes over low heat, it should stew and become soft without frying.
Let it cool, meanwhile beat the egg in a bowl with a pinch of salt and pepper.
Add the ricotta and mix it until you get a cream (2).
Place the puff pastry in the pie pan, prick the bottom, and fold along the edges.
Pour the ricotta and egg cream and spread it over the entire base. Add the previously cooked leek and the diced speck (3).
Place the savory pie in a fan oven at 356-374°F and bake for about 30 minutes. Adjust the time according to the power of your oven.
The savory pie with leeks and speck is ready, cut it into wedges and serve hot or warm… enjoy your meal!
Tips and Notes
You can replace speck with smoked bacon or cooked ham. You can also omit the cured meats if you don’t like them.
Instead of puff pastry, you can use shortcrust pastry or my base for savory pies without butter (here you find the ingredients and procedure).
You can substitute ricotta with cooking cream.
You can flavor with herbs like thyme, parsley, or marjoram.
