Ingredients for making fregula with seafood in the multicooker

  • 9 oz baby octopuses (already cleaned)
  • 9 oz clams
  • 15 mussels (half shell)
  • 6 scampi
  • 0.42 cup white wine
  • 3.5 oz peeled tomatoes
  • 1 clove garlic
  • 3 tablespoons extra virgin olive oil
  • 1 chili pepper
  • 2 sprigs parsley
  • 2 salt
  • 2 pinches pepper
  • 12 oz fregula
  • 0.85 cup water
  • 2 sprigs parsley

What you need

  • 1 multicooker
  • 1 Wooden spoon

Procedure

  • Peel and chop the garlic clove, distribute it in the instant pot and add the parsley sprigs, oil, and chili pepper, set the instant pot to 392°F and sauté for 1 minute.

    Add the baby octopuses and sauté for another 1 minute, stirring often. Add the scampi, clams, mussels, and stir. Add the wine and let it evaporate for a minute. At this point, add the peeled tomatoes, salt, and pepper. Stir well.

  • Now add the fregula and water, stir, and close the instant pot with its lid. Set the multicooker to pressure function, set to medium and start cooking for 6 minutes. At the end of the cooking, let the instant pot rest for 5 minutes with the valve closed, then depressurize.

    Remove the lid, stir the fregula with seafood in the instant pot, and garnish with chopped parsley. Serve immediately.

Extra tips for seafood fregula with instant pot

Instead of water, for an extra touch of flavor, you can use 1 cup of filtered bisque instead of water.
