Ingredients for the Chicken Stew with Bacon and Mustard

If you are celiac, check that mustard and bacon have the label “gluten-free”.

  • 1.76 lbs chicken breast
  • 3.5 oz smoked bacon
  • 2/3 cup fresh liquid cream (unsweetened)
  • 1 tablespoon Dijon mustard (or 2 tablespoons of regular mustard)
  • 3.5 tbsp white wine
  • 2 tablespoons extra virgin olive oil
  • 1/4 onion
  • 1 pinch salt
  • to taste pepper

How to Prepare Creamy Mustard Chicken Breast

  • To prepare the mustard chicken breast, start by cutting the chicken breast into pieces not too large (1). Finely chop the onion (2). Cut the smoked bacon into strips. In a non-stick pan pour two tablespoons of oil, heat it well, and add the bacon (3).

  • Let it brown for about a minute, then, as soon as the fat starts to become transparent, add the onion (4), lower the heat, and let it gently fry. Then add the chicken breast (5), season with salt and pepper, and let it brown on all sides (6).

  • Raise the heat and deglaze with the white wine (7). Let it evaporate briefly, then add the mustard (8). If you use Dijon, which has an intense flavor, one tablespoon will suffice; the more industrial variant has a milder taste, so it’s better to use two tablespoons. Stir briefly and also add the fresh cream (9).

  • Cover with a lid and let the mustard chicken stew cook for 7-8 minutes (10). Once cooked, remove the lid and let the cooking juices thicken briefly (11).

Storage

You can store the chicken stew in the fridge, closed in an airtight container, for up to 2 days.

Tips and Variations

If you add 500 g of sliced champignon mushrooms to the initial sauté, you will get a main dish with a side included. The mushrooms pair very well with the flavor of this dish!

FAQ (Questions and Answers)

  • What can I use instead of cream?

    For a lighter version of mustard chicken breast, you can use 150 ml of milk instead of cream; to still achieve a creamy dish, lightly flour the pieces of chicken breast before browning them (if you are celiac, you can use rice flour or cornstarch).

  • Can I use UHT cooking cream instead of fresh cream?

    Yes, but in that case, add it only in the last 2-3 minutes of cooking.
