Ingredients

  • 2 onions (quartered)
  • 1 1/4 cups chickpea flour
  • 3/4 cup water
  • 2 tbsps extra virgin olive oil
  • 1 tsp turmeric powder
  • to taste salt
  • 1 clove garlic
  • to taste black pepper
  • 1 tsp parsley
  • 1 tsp paprika
  • 1 pinch hot chili pepper (to taste)
  • 7/8 cup peanut oil (for frying)

Steps

  • Place chickpea flour with turmeric in the sieve,

  • paprika and

  • hot chili powder.

  • Sift the powders into a bowl.

  • Add salt and pepper

  • Mash the garlic and add it along with the olive oil, chopped parsley

  • and water little by little.

  • Slice the onions into wedges and add them

  • into the bowl with the other ingredients.

  • Add the onions and continue to mix to combine all ingredients well.

  • Heat the peanut oil in a pan to 340°F, and using a spoon, drop portions into the hot oil and cook the onion fritters
