Sweet peaches are an easy recipe for refined and elegant desserts to be served as a dessert or given as a gift to friends.
They are a truly irresistible dessert, both for their very inviting appearance and especially for their enveloping and delicate taste.
Sweet peaches are pastries consisting of two cookie-based hemispheres joined with custard, soaked with alchermes, and covered with sugar. I used custard, but hazelnut cream or a jam also works well.
Thanks to their fresh and intense flavor, as well as their inviting appearance, these sweets are suitable for any occasion and, above all, win over all palates: from the most demanding to children who love to sink their little teeth into these delicious peaches.
The significant scenic effect of sweet peaches is further highlighted by the final garnish with a green leaf. I used small mint leaves, but alternatively, those made from sugar paste or bought from your trusted store are also fine.
This is a typical Easter dessert, but it can be prepared in any season of the year.

Sweet Peaches
- 3 1/3 cups all-purpose flour
- 1 packet baking powder
- 2/3 cup sugar
- 7 tbsps butter
- 2 eggs
- 2 eggs
- 1 1/8 cup milk
- 1/3 cup sugar
- 1/4 cup all-purpose flour (or corn starch)
- as needed lemon (zest)
- as needed alchermes
- as needed sugar

Steps
Sweet Peaches
Pour the milk into a saucepan, add the lemon peel, and heat.
Beat the egg yolks with the sugar, add the flour, and mix well.
Pour the egg mixture into the hot milk, stir, and let thicken on low heat until the cream coats the spoon.
Pour half of the cream into a bowl and cover it with plastic wrap touching the surface.Once cold, put it in the fridge; we need it very cold
In a bowl, beat the eggs with the sugar, add the butter, sifted flour, and baking powder. Work until you get a soft but compact dough.
Let it rest for 30 minutes with the dough wrapped in plastic wrap.
Break off pieces of dough about 25 grams each using a precision scale (with this measure they will be of medium size, increase the amount if you want), make balls and place them on a baking sheet lined with parchment paper, taking care to space them a couple of centimeters apart.
Slightly flatten them and bake in a convection oven at 356°F for about 15-20 minutes until they are just golden: be careful not to let them color excessively.
Cooking in an air fryer Spray the balls with oil spray and cook in the air fryer for a total of 8 minutes: the first 4 at 392°F, then spray the oil again, lower to 356°F, and continue for the last 4 minutes.
Note: Check because each oven and fryer has its own cooking times.
Obviously, the cooking times change depending on the size of the balls you have made.
When the half-spheres are just barely warm, using a pointed knife, slightly hollow them out (from the base side) to form a small cavity that will hold the custard.
Fill a piping bag with custard, take 2 half-spheres and fill them with enough cream so that the cream acts as a glue and, when joining the 2 cookies, a little bit comes out.
Gently dip the peaches in alchermes and roll them in sugar, covering all sides.
Place them on a serving tray or in paper cups and garnish with mint leaves

Notes
Some recipes suggest brioche dough instead of cookie dough.
It’s always a matter of personal taste, and I, who didn’t know this recipe, wanted to try both: my preference is by far the first one.
