COLD CAKES with POCKET COFFEE, easy and quick single-serving sweets to prepare, a delicious idea to serve after lunch or dinner with coffee and chocolate cream.
I had a half-open box of Pocket Coffee in the fridge (yes, a forgotten Christmas gift 😅) and they were just there staring at me every time I grabbed water. Too few to offer, too many to finish by myself. So I thought: why not make a dessert out of them?
These cold cakes with Pocket Coffee were born, creamy, delicious, perfect to serve after dinner or as single-serving desserts when you have guests. They take 10 minutes to prepare, keep them in the freezer, and that’s it. I used whipped cream and mascarpone as a base, and melted those famous coffee chocolates inside to give that irresistible touch.
You can also use crushed cookies at the base to make a sort of mini spoon cheesecake: in cups, semi-sphere molds, or silicone molds… let your imagination run wild!
Perfect for recycling leftover Pocket Coffee, also great with similar liquor chocolates or coffee-filled ones.

Ingredients
- 3.5 oz chocolate
- 1 cup non-dairy cream for cooking, lactose-free
- 2 chocolates (pocket coffee)
Steps
Whip the cream in a bowl with electric beaters, I use the mixer for non-dairy cream.
Add the pocket coffee, the chocolate cream or the whole thing and continue to mix and blend until everything is well combined.
Melt the chocolate in a bain-marie and place it in the mold for cakes, a semi-sphere silicone mold, or in paper cups, put in the freezer for 5 minutes.
Remove the mold and fill it with the cream, put it back in the freezer for at least an hour.

Yes! Coffee chocolates, with creamy filling or liquor-filled ones work well too.

Of course! Keep them in the freezer and take them out 10 minutes before serving.

Absolutely yes, if you want to make the dessert lighter or lactose-free.
Do I have to use molds?
No, you can also pour the mixture into small cups or jars for spoon desserts.

At least 3-4 hours to set well, even better if overnight.
