Tender and flavorful pork chops, seasoned with mustard, paprika, and herbs… a very simple main course, which you can pair with potatoes or vegetables of your choice. Thanks to the pressure cooking in the multicooker, the chops turn out soft and juicy in just a few minutes. You can use different cuts of meat, in my case I chose fairly thick slices of loin, with a bit of fat around, but if you prefer you can use shoulder, neck or bone-in chops. Ingredients
- 2 pork chops (about 3/4 inch thick)
- 1 teaspoon honey
- Half teaspoon paprika
- 1 teaspoon mustard
- herbs (dried, to taste)
- 1 sprig rosemary
- 1 clove garlic
- Half cup white wine
- Half cup beef broth
- extra virgin olive oil
- salt

Preparation
In a small bowl, mix honey, mustard, paprika, herbs to taste (thyme, sage, marjoram, etc.), a pinch of salt, and a drizzle of oil.
Using a brush, spread the sauce obtained on the chops, on both sides.
In the multicooker pot, place a clove of garlic, a sprig of rosemary, and a drizzle of oil. Sauté for a few seconds, then place the chops and sear them for a minute or two.
Deglaze with the wine, let it evaporate, and moisten with the hot broth.
Close the pot with the appropriate lid and set to pressure cook (or “stew” mode if you have my model) for 8 minutes.
At the end, vent the lid until it can be safely opened.
Remove the chops and place them on a tray, drizzling them with the cooking juices.
If desired, after removing the meat, you can thicken the sauce by adding a small piece of butter and a little flour (or cornstarch).

Tips and Notes
Adjust cooking times based on your multicooker/instant pot model and the thickness of the chops.
You can customize the seasoning according to your preferences. If you do not like spices, you can flavor the meat with just oil, salt, and pepper.
You can season the chops in advance and store them in the refrigerator, in a glass container.
