The Savory Tart with Tomatoes, Pesto, and Stracciatella is an easy rustic dish to prepare with just 4 ingredients, colorful and full of flavor. A very simple recipe consisting of a puff pastry base filled with basil pesto, plenty of tomatoes, and then, after baking, enriched with spoonfuls of stracciatella. It takes less than 10 minutes to prepare because we use ready-made puff pastry that we usually have in the fridge. Alternatively, you can use shortcrust pastry either ready-made or homemade in the classic version, with tomato or without butter. We can also use ready-made pesto, but if we have good fresh basil and a few other ingredients like pine nuts, oil, and cheese, making it at home with the classic mortar and pestle or quickly in the mixer will be simple and fast. Tomatoes abound in the summer garden and on the fruit and vegetable stalls, and you can also use salad tomatoes like beefsteak tomatoes or red and yellow cherry tomatoes. Finally, you can’t miss good olive oil and the stracciatella that adds freshness and forms an incredible flavor pair with the tomatoes!
The preparation is very simple: spread the puff pastry with pesto, fill with sliced tomatoes, and bake for 25 minutes at 356°F. Let it cool slightly and cover with stracciatella.
