Stale bread is never thrown away!

By now you know me, nothing goes to waste in the kitchen, and the art of culinary recycling is truly an art; it’s always good to know how to make use of everything you have in the fridge or pantry.

Bread is one of the most wasted foods in Italian homes. According to some estimates, kilograms of bread are thrown away every year because it becomes hard or dry.

But with a bit of creativity, it can be given a second life. Besides the classic uses for soups or breadcrumbs, you can transform it into perfect snacks for aperitifs or to munch on throughout the day.

Here is an easy and quick method to create pizzas or tasty bread croutons or chips using an air fryer or electric oven. You will need few ingredients, and the result will be surprising.

The base of leftover bread, water, and cheeses mixed together form a “fake dough” that is spread on a baking sheet and topped with tomato, oregano, and basil; finally, it’s baked in the oven where all the ingredients blend together, transforming into a delicious pizza!

And here is a tasty, semi-crunchy delicious pizza!

Perfect for recycling all the stale bread you have in your pantry.

It’s an economical recipe, ideal for using up and not wasting leftover stale bread. Moreover, depending on the topping and quality of the bread, you can create a different taste each time; it’s also excellent with whole grain bread.

It’s an extremely easy and very quick preparation that is a big hit in my house, in fact it disappears immediately. You can use the type of stale bread you prefer: from rolls to rustic, even a mix of leftovers and gluten-free!

The only trick to follow for a perfect bread pizza is to add water little by little to understand when the bread is sufficiently moist; white bread, for example, absorbs less liquid than whole grain bread. The dough is perfect when it has a consistency like that of meatball dough, not too wet or crumbly.

In this case, I chose to make a very simple Bread Pizza: tomato and oregano; but you can top it as you like, adding mozzarella, provola, cheeses, ham!

Just like Bread Gnocchi and Fried Bread Balls, it’s perfect as a dinner or lunch saver, to take on trips and to the beach!

Great even the next day and reheated!

Ingredients

Tomato Bread Pizza

  • 10.5 oz stale bread
  • 3.5 oz extra virgin olive oil
  • 1 cup water (approximately)
  • 1.75 oz Parmesan (or blender)
  • 10.5 oz tomato purée (or peeled tomatoes)
  • to taste dried oregano
  • 2 tablespoons extra virgin olive oil
  • salt

Steps

Tomato Bread Pizza

  • First of all, crumble the bread into not too fine pieces.

    Use your hands or a knife.

    The important thing is that the bread is not pulverized:

  • Add a pinch of salt but not too much, 3.5 oz of oil, and gradually add the water.

    (If the bread is very hard, you might need a bit more water, while if the bread is just from the day before, you’ll need less).

    The perfect dough should be soft, but still firm and consistent. Set it aside for 5/10 minutes.

  • Season the tomato purée with oil, oregano, and salt.

  • Line a round or square baking pan with parchment paper.

    Pour the bread mixture in and spread it evenly over the surface, compacting it.

  • Add the tomato sauce, distribute it perfectly even on the edges. Finish with a drizzle of oil and a handful of oregano:

    Baking in Oven: bake at 392°F for 15/18 minutes.

    Cooking in Air Fryer: Cook at 356°F for about 5-7 minutes, checking the browning halfway through. If you desire extra crispness, extend the cooking time by another 2 minutes.

    (Obviously, check every oven and fryer has its own timing).

  • Remove the bread pizza from the oven and top with fresh basil or dried oregano as I did.

Advice

If there’s any left, it can be stored in an airtight container in the fridge for 2 days.

You can use any type of stale bread, and there’s no need to remove the crust.

If you use warm water, the bread will soften more easily.

Obviously, you can top your bread pizza as you like with or without tomato, changing the cheeses, and adding anchovies, capers, olives, and anything else you want and like.

You can add mozzarella, but it should be added almost at the end of cooking.
