Yesterday I wanted a simple and colorful dish, so I took some fresh peppers I had in the fridge and made these spaghetti with peppers, perfect for a quick and light lunch. It’s an easy recipe that combines the sweetness of the peppers with al dente pasta, without complications and without wasting time.
I sautéed the peppers in a pan with a drizzle of extra virgin olive oil and a clove of garlic, just long enough to make them soft but still crunchy, then I added the al dente cooked spaghetti and a pinch of chili pepper to give it some character. A summer dish, fresh and very simple that is ready in less than 20 minutes.

- 3.5 oz green chilies
- 1 clove garlic
- 3.5 oz cherry tomatoes
Steps
Cut the cherry tomatoes into wedges.
Cut the peppers into strips, remove the seeds from the green chilies.
Brown the garlic, add the cherry tomatoes and cook a bit then add the peppers and cook until they soften.
Cook the pasta, then drain it al dente and add it to the sauce, add a few ladles of pasta cooking water to the sauce.
Serve the pasta with a sprinkle of Parmesan.
