Ingredients for Shortcrust Pastry with Spelt Flour
- 2 1/3 cups spelt flour
- 8 1/2 tbsp clarified butter (or regular butter)
- 3/4 cup powdered sugar
- 1 egg (medium)
- Half lemon zest (grated)
- Half teaspoon baking powder

Preparing the Shortcrust Pastry with Spelt Flour
Put the softened clarified butter, powdered sugar, and baking powder in the bowl. Using a fork, press the butter to absorb the sugar and baking powder. Then add the egg and continue to mix, blending well and incorporating the flour. Knead by hand until a homogeneous dough is formed, wrap it in plastic wrap, and leave it in the refrigerator for a couple of hours before using it.
Storage and Tips
Store the shortcrust pastry in the refrigerator wrapped in plastic wrap for 4/5 days, you can also freeze it for up to two months, maximum three, and thaw it in the fridge before using it.

– you can flavor it with vanilla or grated orange zest.
– if you want to make it chocolate-flavored, add 25g of cocoa powder, removing the same amount of spelt flour.
