I wanted to prepare a simple yet impressive spoon dessert, and the idea of black cherry cups with Pavesini came to me! You know when you have those soft cookies left over from an opened package, staring at you from the pantry? That’s how it started.
In the fridge, I had some plant-based cream and a jar of syruped cherries just waiting to be used. In 10 minutes, this fresh and delicious dessert was born, perfect for summer, also to serve when you have last-minute guests.
The recipe is very easy: slightly soaked Pavesini, quick cream based on cream and mascarpone, and syruped cherries on top. A spoon dessert to prepare in advance and keep in the fridge, also perfect as an idea for the end of the meal or an elegant snack.

Ingredients
- 8 Pavesini
- 9 oz mascarpone
- 3/4 cup whipping cream
- 4 tbsps powdered sugar
- 4 tbsps cherry syrup
- 16 syruped cherries
Steps
Whip the cream very cold with the powdered sugar and gently fold it into the mascarpone, mixing from bottom to top until you get a smooth and fluffy cream.
Lightly soak the Pavesini with milk or cherry syrup (I did not soak them).
Cut the cherries into pieces except for 4 for decoration.
In each cup, place a layer of Pavesini, then add a layer of cream, pieces of syruped cherries, and a teaspoon of syrup.
Repeat with a second layer of Pavesini and another of cream.
Finish with a drizzle of cherry syrup and a whole cherry for decoration.
Let rest in the fridge for at least 1 hour before serving. Even better if prepared in advance!
