Ingredients

  • 14 oz asparagus
  • 4 eggs
  • 1 pinch salt
  • 2 tbsp butter

Steps

  • Clean the asparagus by cutting off the woody bottom part and rinsing them under running water.

    Put them in a pot with lightly salted boiling water and cook them for about 5-7 minutes or until they are tender but still crisp. Drain them and set them aside on a serving plate.

  • Break the eggs into a small bowl and lightly salt them.

    Melt the butter in a small pan or a small skillet. Add the eggs, being careful not to break the yolk, and cook for 3/4 minutes.

  • Gently shake the pan to loosen the eggs and place them on top of the asparagus.
