Ingredients

  • 10.5 oz pork loin
  • 1 eggplant
  • 3.5 oz scamorza cheese
  • to taste salt
  • to taste breadcrumbs
  • to taste parmesan cheese
  • to taste extra virgin olive oil

Tools

  • 4 Skewers

Instructions

  • Cut the eggplants into slices, then grill them in a non-stick skillet, add salt, and set aside.

  • On a cutting board, place the pork loin slices, then top with a slice of grilled eggplant and a piece of scamorza cheese.

  • Then roll up to create your rolls, continue using the rest of the ingredients. Skewer all the rolls, then season with a drizzle of oil, breadcrumbs, and a sprinkle of parmesan.

  • Bake in a preheated oven at 356°F for about 30 minutes, remove from the oven and serve hot and stringy.

Storage

The pork loin skewers with eggplants and cheese can be prepared well in advance and cooked when needed. I don’t recommend storing them; however, if there are leftovers, you can keep them in the refrigerator in an airtight container until the next day.
