Baked Turkey Bites with Light Bread Crumbs

The baked turkey bites marinated with lemon and light bread crumbs are a simple and tasty meat dish.

Turkey meat is white and lean.

I used a boneless turkey thigh cut into bites, slices, or strips.
Alternatively, turkey breast.
I marinated the skinless turkey with lemon juice and a mix of herbs and spices for roasting.
Alternatively, white wine.
I breaded with whole grain breadcrumbs.
Do not forget to account for the breading in your total carbohydrate count for the meal.

Enjoy them plain or with a light sauce.

Ingredients

  • 1 turkey thigh
  • mix of herbs and spices for roasting
  • as needed lemon juice (or white wine)
  • as needed whole grain breadcrumbs
  • 2 tablespoons parmesan cheese (grated)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • as needed parsley (chopped)
  • 1 drizzle extra virgin olive oil (raw)
  • as needed lemon (sliced)

Preparation

I used a boneless turkey thigh cut into bites, slices, or strips.
Alternatively, turkey breast.

  • Deboning the turkey thigh is a task that requires sharp knives and skill.

    If you want to cook the boneless turkey thigh, I recommend having the butcher perform the deboning at the time of purchase to get a thigh that is as intact as possible.

  • Boneless turkey thigh
    Buy the turkey thigh and ask the butcher to remove the skin and debone it.
    Also ask to cut it into bites, slices, or strips.

    Non-boneless turkey thigh
    Remove the skin.
    Cut the meat into bites, slices, or strips free of cartilage and tendons [filaments] until the bone is clean.

  • Nothing goes to waste: also marinate the pieces of meat with cartilage and tendons [filaments] and the bone; there is always someone at the table who enjoys cleaning them.

  • Transfer the turkey meat to a bowl or baking dish.
    Season with:
    • a mix of herbs and spices for roasting;
    and massage the meat.

    Drizzle with lemon juice.
    Alternatively, white wine.

  • Seal with plastic wrap and place in the fridge for one hour.

  • Remove the turkey bites from the fridge at least half an hour before cooking.

    In a plate, mix:
    • whole grain breadcrumbs;
    • grated cheese;
    • salt;
    • pepper;
    • parsley;
    and mix.

  • Moisten the turkey bites with the marinade.

    Dip the turkey bites moistened with the marinade in the breading, ensuring it adheres well.

  • Briefly preheat the oven.

    Bake at 350°F in a convection oven for 30 minutes + 1-2 minutes on grill mode.

  • Plate the dish.
    Drizzle with a bit of olive oil.
    Grind a little more pepper.
    Serve with lemon slices.
