Ingredients for chickpea and kale burgers

  • 18 oz cooked, boiled chickpeas
  • 7 oz kale (already cooked)
  • 2 tablespoons nutritional yeast
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons extra virgin olive oil
  • as needed breadcrumbs

Recipe for chickpea and kale burgers

  • Start preparing the chickpea and kale burgers by washing and cleaning the kale and cooking it in boiling water or steaming it for about 5 minutes.
    For this recipe, you can use canned chickpeas or cook 7 oz of dry chickpeas after soaking them for 24 hours.
    Place both the cooked chickpeas and the kale in the cup of a blender or food processor.

  • Continue by adding the nutritional yeast (which is not the one for leavening), smoked paprika or other spices to your liking, garlic powder, and extra virgin olive oil.
    Blend until you get a fairly firm mixture; if necessary, add some breadcrumbs.
    Taste and if necessary, adjust the salt.

  • Form the burgers: take two scoops of the mixture (to make them all the same I used an ice cream scoop), form a ball, and then flatten it between your hands to create the burgers.

  • Then coat each burger in breadcrumbs, making sure it sticks well.

  • Cook the burgers in a pan with a little extra virgin olive oil for 5-6 minutes per side or in the oven at 400°F for about fifteen minutes, turning them halfway through cooking.

  • Serve the chickpea and kale burgers with salads or seasonal vegetables.
