The baby octopus with instant pot is a second course cooked with the multicooker. The recipe is that of stewed baby octopus with potatoes which, cooked with the electric pressure cooker, will be really quick to make. I used the sauce to dress the spaghetti, as in this recipe. I love cooking baby octopus, sometimes I stock up at the frozen food store and then preserve them with the jar cooking technique. In less than half an hour the stewed baby octopus cooked with the instant pot will be ready to be served. The ingredients are: baby octopus, potatoes, peeled tomatoes, onion, garlic, and herbs. Ingredients for stewed baby octopus
- 1.5 lbs baby octopus
- 3 potatoes (medium (550 g))
- 1 red onion (small)
- 1 clove garlic
- 3 tbsps extra virgin olive oil
- 400 ml peeled tomatoes
- 1 bunch parsley
- 2 pinches salt
- 2 pinches pepper (or 1 chili pepper)

- 1 multicooker
Procedure
Remove the insides of the baby octopus and, under running water, rub the baby octopus between your hands. This way you will remove the impurities from the tentacles. Drain them well and set aside.
Peel the potatoes, wash them and cut them into regular pieces. Peel the onion and slice it thinly. Wash and chop the parsley.
Distribute the onion and garlic in the pot, add the oil and brown them for 3 minutes with the sauté function of the instant pot. Add the baby octopus and continue to brown for a few minutes, stirring often. I, in this case, bring the temperature to 392°F. Then, add the rest of the ingredients and stir.
Close the pot with the pressure lid, valve closed, and start cooking for 20 minutes with the pressure function, setting it on medium (at 248°F).
At the end of cooking, let the pot rest closed for 5 minutes. Vent (depressurize) and remove the lid.
Your baby octopus with instant pot is ready, hot, and steaming, if you like you can enrich them with chopped parsley.
Additional tips for cooking baby octopus with the instant pot
You can use frozen baby octopus and thaw them.
Stewed baby octopus in slow cooker
Once browned and without adding the potatoes, close the pot and cook with the slow cooker function for 4 hours, setting it on low. In this case, I recommend serving them with bread croutons.
