The air fryer tarte tatin is a really easy recipe to make the famous upside-down savory tart, in a savory version with cherry tomatoes. This recipe is taken from my book Air Fryer (ed. Ingredients for making the savory tarte tatin with the air fryer
- 1 roll puff pastry (round)
- 1 tablespoon mustard
- 10.5 oz cherry tomatoes (red and yellow)
- 1 clove garlic
- 5 leaves basil
- 3 pinches dried oregano
- 2 pinches salt
- 1 tablespoon extra virgin olive oil (+ for brushing the pan)
Tools needed
- 1 Air fryer
- 1 Pan with the inner diameter of the basket
- 1 Bowl
- 1 Brush
Procedure
Brush the pan with a little oil, both the bottom and the inner edges.
Wash the cherry tomatoes and, for a more scenic effect, leave the stems attached. Distribute them in the bowl and season with the torn basil, minced garlic, oregano, salt, and a tablespoon of oil. Mix well.
Arrange the cherry tomatoes in the greased pan, trying to keep them all in the center of the pan and without overlapping.
Unroll the puff pastry and brush it with mustard. Using the parchment paper, flip the puff pastry onto the cherry tomatoes and fold the outer edges towards the bottom of the pan. Now, with the help of a fork, prick the puff pastry.
Preheat the air fryer for 2 minutes at 392°F. Then, insert the pan and cook for 20 minutes at 392°F. Once cooking is complete, remove the tarte tatin from the air fryer and let it cool for 5 minutes.
Trim the edges of the tarte tatin, so it will be easier to unmold, and, with the help of a plate, flip it. Let it slide into the pan, with the cherry tomatoes arranged upwards, adjusting those that have shifted a bit.
Let the tarte tatin gratinate in the air fryer for 5 minutes at 392°F.
Your savory tarte tatin is ready to be served.

Fruit Tarte Tatin in the Air Fryer
You can also make the tarte tatin in a sweet version. Cut some apricots or small peaches in half, season them with a bit of brown sugar, and arrange them in the pan (as above), with the cut side facing up. Brush the puff pastry with a little lemon or orange marmalade and proceed as per the recipe.
