Salmon Isolana Style
- 5 oz salmon (2 fillets)
- 2 tbsp almonds (chopped)
- 4 cherry tomatoes
- Half onion
- 5 canned peeled yellow tomatoes
- 1 tbsp chopped parsley
- 2 tbsp breadcrumbs
- 0.28 oz pickled capers
- as needed olive oil
- 1 pinch salt
Preparation of Salmon Isolana Style
Coarsely chop the almonds and capers, and mix them with the breadcrumbs and parsley.
Drizzle a baking dish with a little olive oil, and add the sliced onion.
Place the two salmon fillets, previously washed and dried, and sprinkle them with the almond and parsley mixture.
– Wash the red tomatoes and cut them in half, drain the yellow tomatoes from their preserving liquid and add everything to the baking dish.
– Preheat the oven to 400°F, finish with a drizzle of olive oil, salt, and optional pepper, cover the dish with aluminum foil, and bake for 15 minutes.
– Serve the Salmon Isolana Style hot, garnished with whole capers
