Ingredients

  • 28 oz potatoes
  • 7 oz mortadella
  • 3.5 oz scamorza cheese
  • 3 tbsps breadcrumbs
  • 1.76 oz Parmesan cheese
  • to taste extra virgin olive oil

Tools

  • 1 Mandoline
  • 1 Baking Tray

Procedure

  • Start by washing the potatoes, then peel and slice them thinly and set aside. Line a baking tray with parchment paper, then oil it and sprinkle with breadcrumbs

  • Arrange the potatoes side by side, slightly overlapping them, then season with salt and pepper.

  • Fill with slices of mortadella and scamorza, then

  • cover with another layer of potatoes overlapping like the base previously made.

  • Sprinkle with breadcrumbs, grated Parmesan, and a drizzle of oil. Bake at 392°F for 40 minutes or until golden.

  • Final touch, I added rosemary for aroma.

Storage

The potato, mortadella, and cheese pizza can be stored in the refrigerator for up to two days in an airtight container.
