Ingredients
- 28 oz potatoes
- 7 oz mortadella
- 3.5 oz scamorza cheese
- 3 tbsps breadcrumbs
- 1.76 oz Parmesan cheese
- to taste extra virgin olive oil

Procedure
Start by washing the potatoes, then peel and slice them thinly and set aside. Line a baking tray with parchment paper, then oil it and sprinkle with breadcrumbs
Arrange the potatoes side by side, slightly overlapping them, then season with salt and pepper.
Fill with slices of mortadella and scamorza, then
cover with another layer of potatoes overlapping like the base previously made.
Sprinkle with breadcrumbs, grated Parmesan, and a drizzle of oil. Bake at 392°F for 40 minutes or until golden.
Final touch, I added rosemary for aroma.
Storage
The potato, mortadella, and cheese pizza can be stored in the refrigerator for up to two days in an airtight container.
