Preparation

  • Rinse and dry the salmon fillet with paper towels. Check for any bones, remove them with tweezers if necessary.

    If you bought a fillet with skin, you can remove it or leave it, as you prefer.

  • With the help of a small food processor, chop the bread along with a handful of aromatic herbs.

    Transfer it to a plate, add salt, pepper, a handful of sesame seeds (if you like), the grated zest of half a lemon (untreated), a drizzle of oil, and mix.

  • Cut the salmon into chunks (or leave it whole if you prefer). Lightly oil the surface and, if you like, add a bit of lemon juice.

    Coat the salmon in the aromatic mixture, ensuring it adheres on all sides, especially the top.

  • Place the fish in the air fryer basket, resting it on a small tray, or on a piece of parchment paper (cut to size).

  • Close the air fryer and cook at 356°F for about 10 minutes. Adjust the time based on your model and the thickness of the salmon: it may take 2-4 minutes more if cooking the whole fillet, a couple of minutes less if you cut smaller pieces.

  • When done, transfer the salmon to a platter, optionally adding fresh aromatic herbs or lemon slices.

  • If you don’t have an air fryer, place the salmon in a baking dish and bake it in a fan oven at 374°F for 15-20 minutes, turning on the grill if necessary.

Tips and Variations

Choose fresh and good quality salmon. If you can’t find a fillet, you can buy steaks, they are still excellent and cost a bit less.

For the breading, you can use rustic bread (even stale), sandwich bread, or other types. Breadcrumbs are less suitable because they are usually ground very fine.

You can season with your preferred herbs, either fresh or dried. If you like, you can add a clove of garlic minced or a pinch of garlic powder.
