The low glycemic index dough for desserts is a simple and versatile recipe for preparing soft brioches, mini doughnuts, and baked fritters.
I used the low glycemic index mix [molino spadoni] based on type 1 flour and resistant starch, rich in fiber and proteins, and type 2 flour.
Ricotta dough without butter, milk, and eggs
• without butter for a hyperglycemia concern.
• without milk and eggs for personal taste.
Sugar-free dough just needs a couple of drops of liquid sweetener added to the ricotta.
Customizable dough you can add chocolate chips or fresh fruit or dried fruit.

- 7 oz cow's milk ricotta (1-2 days old, well drained)
- 2 drops liquid sweetener (Diete.Tic)
- 1/2 cup low glycemic index flour (Molino Spadoni)
- 1/3 cup type 2 flour (Molino Spadoni)
- 1/2 tsp baking powder
- q.b. lemon zest (grated)
- 14 oz cow's milk ricotta (1-2 days old, well drained)
- 4 drops liquid sweetener (Diete.Tic)
- 1 cup low glycemic index flour (Molino Spadoni)
- 2/3 cup type 2 flour (Molino Spadoni)
- 1 tsp baking powder
- q.b. lemon zest (grated)
- dark chocolate chips
- fresh fruit (chopped)
- dried fruit
What flour can I replace the low glycemic index mix with?
• if you don’t have the low glycemic index mix, you can obtain an equally elastic and versatile dough using type 1 and/or type 2 flour [semolina and glycemic index flours] considering that the impact on glycemia may differ.

Preparation
Put into the mixer:
• the ricotta;
• the liquid sweetener or your usual sweetener;
and blend.Pour into a bowl:
• the low glycemic index flour and type 2 flour;
• the sifted baking powder;
• the blended ricotta;
• the grated lemon or orange zest;
and start mixing the dough with a silicone spatula.Continue kneading so that the ricotta and flour blend well.
Add two tablespoons of extra dark chocolate chips or dark chocolate [or fresh fruit pieces or dried fruit] and incorporate them into the dough.
The result is a sticky dough that’s difficult to work with hands.
Transfer the dough onto a greased cutting board or pastry board.

Oil your hands to handle it more easily, and you can also use a spoon, a teaspoon, and a pastry cutter.
Shape your sweets.

Flatten the dough and cut strips with a pastry cutter.
Close each strip onto itself to form a mini doughnut.Low glycemic index fritters
I used a 1 tbsp measure to scoop the dough and a teaspoon to detach it: if you don’t have the measure, you can use oiled spoon and teaspoon.Line a baking sheet with parchment paper and place the brioches, mini doughnuts, and fritters on top.
Briefly preheat the oven.
Bake at 350°F for about 20-30 minutes in a ventilated oven until evenly golden.
Temperatures and times may vary from oven to oven and depending on the size of the sweets.Your low glycemic index desserts are ready.

Finish with a dusting of cinnamon mixed with powdered sugar.

Important in any case, in the presence of diabetes, it is crucial to build an experience on the impact of this and all other foods on blood sugar. This means measuring before and two hours after eating it. Possibly more than once to get more reliable information. If the glycemic increase is contained [less than 50 mg], you can put a “green sticker” on that type of food. Otherwise, better to avoid.
