Ingredients

  • 1 cup canned chickpeas
  • 1 2/3 cup tomato pulp
  • 1.4 oz cured pork cheek (or bacon, to taste)
  • 1 clove garlic
  • 1 pinch chili pepper (to taste)
  • 1 sprig rosemary (or thyme, oregano)
  • extra virgin olive oil
  • salt

Preparation

  • Cut the cured pork cheek (or bacon) into small cubes and place them in a pan.

    Peel the garlic and add it. If you like, you can also chop or crush it.

  • Pour a drizzle of olive oil and add a pinch of chili pepper, to taste.

    Sauté for a minute or two, then add the chickpeas, after draining them from their liquid.

  • Stir, let it flavor for a few moments, remove the garlic (if you added it whole) and add the tomato pulp.

    Season with salt and cook over medium-low heat for 10-15 minutes, or until the sauce has slightly thickened.

  • At the end, scent with chopped rosemary, or with some oregano or thyme leaves.

  • Stewed chickpeas are ready, great as a side dish or to serve on bread croutons.

Tips and Variations

You can replace the cured pork cheek with bacon, lard, smoked ham, or omit the cured meats altogether.

Adjust the amount of tomato to your taste. Instead of pulp, you can use passata or whole tomatoes.

You can use a piece of onion instead of garlic.

Stewed chickpeas are also great for dressing pasta.
