Pork Skewers with Speck and Prunes

Ideal for Sunday lunch, the pork skewers with speck and prunes are very easy to make.
Pork, as we know, pairs well with apples, for example, or with “sweet and sour” preparations. So when I thought of pairing it with prunes, I was very pleased with the result. It’s one of those dishes that’s quick to prepare, and I find it ideal for a Sunday lunch because it’s neither heavy nor laborious to make!!
You can also enrich the skewer with pieces of sausage or bell peppers.

Ingredients

Pork skewers with speck and prunes

  • 10 oz pork tenderloin (or loin cut into chunks)
  • 5 oz dried pitted prunes (pitted)
  • 3.5 oz speck
  • 9 oz new potatoes
  • 4 tbsps olive oil
  • 2/3 cup white wine
  • fine salt

  • 6 Skewers

Procedure:

  • – Wash and boil the new potatoes (with skin on). They are ready when after about 5 minutes of poking them with a skewer or toothpick, they offer no resistance. Soak the wooden skewers.

  • – Cut the potatoes, pork chunks, and speck slices in half. Wrap each meat chunk in half a slice of speck.

  • – Skewer the ingredients, alternating them.

  • Cook in a preheated oven at 350°F for about 15 minutes, basting with wine after the first 5 minutes. – Cover with foil to prevent the speck from drying out too much.

Tips:

– You can use smoked cooked ham instead of speck.

– Use little salt while cooking. Each guest can season to taste if desired.

– The quantities are indicative because it depends on how many skewers you make and especially on how much you fill them.
