The Easter pie roll is a fun and quick variation of the classic Easter pie. It is made very quickly with a ready-made puff pastry roll and already cooked hard-boiled eggs that will remain perfect inside your roll!

How about preparing together an easy and quick reinterpretation of the famous savory pie typical of Easter?
The Easter pie roll is a puff pastry roll filled with the classic filling of ricotta, spinach, and eggs, in this case hard-boiled and not raw, inspired by the typical Easter dish originating from Liguria.
It’s perfect as an appetizer for Easter tables and can be easily prepared in advance!
If you’re on a diet, use whole wheat pastry, and if you have gluten issues, use gluten-free pastry.
Recipe with two cooking methods in the oven or air fryer.
I chose spinach because my family prefers it, but alternatively, you can use artichokes, chard, turnip greens, or those mixed greens available in all supermarkets, both fresh and frozen.
If we want a more intense flavor, just replace cow ricotta with sheep ricotta.
Nutmeg, which I really like, is optional; we can also choose to season with a bit of pepper, for example.
This Easter pie roll is also ideal as a tasty snack for picnics and excursions.

Ingredients
Easter Pie Roll
- 14 oz spinach, cooked, boiled
- 1 1/4 cups ricotta
- 1 puff pastry
- 2 oz Parmesan
- salt
- to taste nutmeg
- 4 eggs (hard-boiled)
- 1 egg yolk (1 tablespoon of milk)

Steps
In a bowl, place the spinach, already boiled and squeezed, and sautéed in a pan to dry out the excess water, then add the ricotta, egg, grated cheese, salt, and nutmeg.
Mix well with a fork.
Prepare the rectangular puff pastry roll, unroll it, and place part of the filling in the center.
Align the hard-boiled eggs and cover with the remaining filling.
Close the puff pastry over the filling and seal the ends well.
Place the roll on a baking sheet lined with parchment paper and brush with the beaten egg yolk.

Baking. Preheat the oven and bake for about 30/35 minutes at 365 °F.
Air Fryer Cooking. Cook at 375 °F for 15/18 minutes, until the strudel is golden brown.
Remember that both the oven and the air fryer have different cooking methods, so always check.
When the roll is golden brown, take it out of the oven and let it cool.
Once out of the oven, let it cool for a few minutes.
Then slice and serve your Easter pie roll!

Advice
Instead of puff pastry, if we prefer, we can use shortcrust pastry. As for the filling, besides the classic ricotta and spinach, we could try an artichoke variant, replacing them with the spinach in the same quantities.
And if we want to make our Easter pie roll even more flavorful, we can use sheep ricotta instead of cow ricotta.
To optimize time, especially if we expect to spend a lot of time cooking on Easter lunch, we can prepare the roll well in advance because it is also delicious cold at room temperature.
