You know when they say a recipe with only 2 ingredients but then there are many more? Well, today is the real recipe with only 2 ingredients. The main ingredient is some old zucchini that were given to me days ago and I haven’t had time to cook them yet. In the spirit of not wasting anything, I salvaged them with this very simple recipe. Zucchini rings. I used the air fryer, but they can easily be fried or baked.

- to taste zucchini
- to taste breadcrumb
- to taste oil & salt

Steps
Wash the zucchini and slice them into not too thick rounds.
Remove the central pulp. Mine were old so I discarded it, but you can save it for a pasta dish.
Lightly oil them and coat them in breadcrumbs. Place them in the air fryer basket, adjust the salt, and cook at 390°F for about 10 minutes.
