In just a few minutes the croutons are ready to be served, rustic and flavorful, they are also suitable for occasions with friends because they are truly appetizing!

Ingredients
- 4 slices whole wheat bread (or rustic)
- 2 sausages (small)
- 2.8 oz mozzarella
- 5.3 oz chicory
- 1 clove garlic
- extra virgin olive oil
- salt

Preparation
Peel the sausages, crumble them with your hands and brown them in a skillet, without adding fats, for a few minutes. Transfer them to another container and set aside.
Cut the mozzarella into pieces and let it drain from excess liquid.
Clean the chicory, wash it, and cut it into chunks. Sauté it in a skillet, with a drizzle of oil, a garlic clove, and a pinch of salt. Moisten the bottom with a little hot water to facilitate cooking.
When it is cooked, turn off the stove and keep it warm.
Place the bread slices on a baking sheet, brush them with a little oil, add the mozzarella and the sausage.
Put the croutons in a hot oven at 375°F (or under the grill) and bake for 7-8 minutes, or until the mozzarella is melted.
Remove the tray from the oven and add the chicory previously sautéed. If desired, you can put them back in the oven for a couple more minutes, but if the chicory is still warm, it’s not necessary.
The croutons with sausage and chicory are ready, transfer them to a cutting board or tray and bring them to the table!
Tips and Notes
You can use sausage from your area, even spicy if you like.
You can replace the chicory with greens or spinach. I recommend choosing fresh ingredients, but if necessary, you can use frozen ones.
You can use whole wheat, rye, multigrain, or rustic white bread.
You can replace mozzarella with provola or scamorza.
