Meat Patties with Radicchio and Brie

Meat Patties with Radicchio and Brie, a delight we cannot deny ourselves, especially during the colder days of the year, when it’s a pleasure to eat something warm and stringy. We can also prepare it ahead of time, perhaps one day the filling and the next the minced meat for the patties to assemble it at the last moment, just when it’s time to bake it. I find that the idea is excellent sometimes even to clean out our refrigerators of leftovers. In fact, my patty originated precisely from this, when one day I faced the dilemma of throwing away or recycling everything that was left. From there came an extremely excellent recipe, which I continued to make, stuffing it with what pleased me most, especially using seasonal foods. With minced meat, you can really create anything.

Ingredients

  • 1 lemon meatball mixture
  • 1/3 pan-fried radicchio
  • 4.2 oz brie cheese
  • to taste breadcrumbs
  • to taste extra virgin olive oil

Preparation

First of all, we need to prepare a third of the dose of Pan-fried Radicchio with Raisins and Pine Nuts (if we also want to decorate them, we prepare the full dose). Right after, the mixture for Mixed Meatballs with Lemon, but without the addition of lemon. Finally, cut the brie into pieces and assemble the patties. Drizzle a little oil inside each and use a brush to spread it all over. Then sprinkle with breadcrumbs, letting the excess fall off.

With your hands, take portions of the meat mixture, flatten it, and place it inside the muffin cups, creating a sort of shell. Fill the molds with the pan-fried radicchio and add the brie pieces in the center.

Cover them with the remaining mixture, pressing on the edges to seal them as best as possible (it will still be normal for at least the liquids to escape during cooking) and sprinkle with breadcrumbs. Place them on a baking sheet and drizzle each with a bit of oil. Bake in a preheated oven at 356°F, static mode, and bake for 35/45 minutes, or until they’re nicely golden.

Once cooked, our Meat Patties with Radicchio and Brie can be served directly hot with the same muffin cups (this way they will be stringy), or slightly cooled on a serving platter. If you have a microwave, everything will be easier: because you can heat them up at the last moment.

Tips

The meat patties can be kept in the refrigerator for at least three days, both raw and cooked, but at least wrapped in food film.

They can also be frozen either raw or cooked, but remember to defrost slowly in the refrigerator or microwave, never at room temperature.
