Ingredients
- 12 oz peas (fresh or frozen)

- 1 cup grated Parmesan
- Half onion
- 1.5 tbsp extra virgin olive oil

Steps
Cook the peas: First, peel and halve the onion and finely chop it.
In a non-stick pan, heat the oil over medium heat. Add the chopped onion and sauté until it turns translucent.
Also, add the peas to the pan and cook for 5 minutes, stirring occasionally, until they become tender.
For fresh peas, you may need to cook them a bit longer.Beat the eggs: While the peas are cooking, beat the eggs with a fork in a bowl. Add the grated Parmesan, salt, and pepper to taste.
Mix everything well, beating continuously with a fork or whisk.
When the peas are cooked, pour the beaten eggs over the peas and stir to distribute the mixture evenly.
Cover with a lid and cook on one side for 10 minutes.
Or until the eggs are set on one side.Flip the omelette: Then, using the lid or a larger plate than the pan, flip and cook on the other side for another 10 minutes.
Until the omelette is well browned on both sides.
