Zucchini Flower Fritters without Yeast or Eggs

Zucchini flower fritters are a typical dish of Italian cuisine and the summer season when zucchini flowers are abundant. They are an appetizing and tasty appetizer or second course. Similar to ‘sciurilli’ fritters from Naples, these zucchini flower fritters are made with a very simple batter based on flour, cold water or beer, grated cheese, and instant yeast. Therefore, no eggs or brewer’s yeast are needed. For this reason, we prepare them in five minutes without having to wait for long rising times. Fried in plenty of hot oil, they become puffy, golden, and crispy but not greasy!

The preparation is very simple: combine flour, instant yeast, cold water, olive oil, grated Parmesan, salt, and pepper to create a batter to which the well-cleaned zucchini flowers are added. With a spoon, take a portion of batter and pour it into the hot oil. Fry each fritter until it is well puffed and golden.

Here are the reasons why you should prepare zucchini flower fritters:

• The batter is made with five ingredients and in five minutes. And if you don’t use grated Parmesan, not only will the ingredients be four, but these fritters will be completely vegan.

• To fry them, simply scoop spoonfuls and pour them into the hot oil, and in a few moments, they will be perfect.

• They are delicious, especially when enjoyed fresh and are irresistible!

Great as an appetizer to prepare on the spot, they are also an ideal second course for the summer season. What are you waiting for? Try the zucchini flower fritters!

Simo and Cicci Recommend

Like all fried foods, it is preferable to consume zucchini flower fritters immediately, but if any are left, you can consume them cold or reheat them in a non-stick pan, or alternatively, in the oven or air fryer.

For a tastier batter, you can add fresh chopped basil or parsley.

For the leavened version, replace the instant yeast with 5 grams of dry brewer’s yeast or 10 grams of fresh brewer’s yeast dissolved in lukewarm water. Prepare the batter and let it rise until it doubles in volume.
