Given the zucchini-rich season and considering it’s 104 degrees in the shade, today for lunch I opted for a cold pasta dish. Really, really good. It can be prepared in just a few minutes, just the time it takes to cook the pasta. I chose smooth penne, but you can use any pasta shape you like.

Ingredients
- 1 zucchini
- 2 tomatoes
- 1.76 oz soft cheese
- 7.05 oz smooth penne
- to taste oil and salt

Steps
Wash the zucchini, dice it, and cook it in an air fryer for about 15 minutes with a little oil and salt.
Meanwhile, boil the pasta as indicated on the package and in a bowl dice the tomatoes and cheese.
Add the zucchini to the bowl of tomatoes and cheese, and mix well, adjusting with oil and salt.
Drain the pasta al dente and add it to the prepared dressing. Mix and let it cool before serving.
