Ingredients
- 1 roll puff pastry
- 12 oz cauliflower
- 1/2 cup ricotta
- 1 egg (large)
- Grana Padano cheese, grated
- breadcrumbs
- extra virgin olive oil
- salt
- pepper

Preparation
Clean the cauliflower by separating the florets and discarding the tougher parts. Wash the florets well and boil them for 5 minutes in salted boiling water. To reduce the strong smell, you can add a tablespoon of apple cider vinegar to the water.
When the cauliflower is tender but still firm, drain it and rinse it briefly under cold water.
Transfer to a bowl, season with salt, pepper, and extra virgin olive oil, and let it cool.
In a separate small bowl, beat the egg with a pinch of salt, add the ricotta, and mix until smooth.
Unroll the puff pastry and place it in a pie pan, with its parchment paper.
Fold the pastry along the edge and prick the center with a fork.
Pour the ricotta mixture over the pastry and spread it (1).
Arrange the cauliflower florets and sprinkle the surface with about half a tablespoon of breadcrumbs and some Grana to taste (2).
Bake the savory pie in a fan oven at 375°F and cook for about 30 minutes, or until the pastry is golden and dry at the base (always adjust based on your oven).
The savory pie with cauliflower is ready, let it cool for a few minutes before slicing and serving.
Tips and Notes
You can use white cauliflower or different colored ones, Romanesco broccoli, or the classic green broccoli.
You can replace the ricotta with cooking cream.
Instead of boiling, you can steam the cauliflower or cook it directly in a skillet, adding a bit of water.
You can replace the puff pastry with shortcrust pastry, either ready-made or homemade.
