Ingredients

  • 1 roll puff pastry
  • 12 oz cauliflower
  • 1/2 cup ricotta
  • 1 egg (large)
  • Grana Padano cheese, grated
  • breadcrumbs
  • extra virgin olive oil
  • salt
  • pepper

Preparation

  • Clean the cauliflower by separating the florets and discarding the tougher parts. Wash the florets well and boil them for 5 minutes in salted boiling water. To reduce the strong smell, you can add a tablespoon of apple cider vinegar to the water.

  • When the cauliflower is tender but still firm, drain it and rinse it briefly under cold water.

    Transfer to a bowl, season with salt, pepper, and extra virgin olive oil, and let it cool.

  • In a separate small bowl, beat the egg with a pinch of salt, add the ricotta, and mix until smooth.

    Unroll the puff pastry and place it in a pie pan, with its parchment paper.

    Fold the pastry along the edge and prick the center with a fork.

  • Pour the ricotta mixture over the pastry and spread it (1).

    Arrange the cauliflower florets and sprinkle the surface with about half a tablespoon of breadcrumbs and some Grana to taste (2).
