Broccoli flatbread, very simple and very tasty, also great as an appetizer, accompanied with cured meats, cheeses, or other vegetables. The dough is prepared in a few minutes, just pour the ingredients into a bowl and mix… you get a kind of liquid batter which is then added to the boiled broccoli. Ingredients
- 1 broccoli (about 10 oz net of waste)
- 1.6 cups all-purpose flour
- 1.9 cups water
- 2 tbsps extra virgin olive oil
- 0.25 cup grated Grana Padano
- 1 tsp salt
- pepper

Preparation
Clean the broccoli by separating the florets, wash it and boil it in salted boiling water for 5-6 minutes.
Drain it, transfer it to a bowl and chop it with a fork (1).
In another bowl, pour the water and oil. In this case, I used 1.25 cups tap water + 0.6 cups of broccoli cooking water to add more flavor.
Gradually add the flour and the Grana Padano, mixing with a whisk.
Finally, add the salt and a pinch of pepper. You will get a smooth and fairly liquid mixture, similar to a batter (1).
Add the mashed broccoli to the mixture and stir.
Line a large baking sheet (mine is about 15.75×10.24 inches) with parchment paper, pour in the mixture and distribute it (2).
Put the baking sheet in a ventilated oven at 392°F and bake the flatbread for about 40 minutes (3). If necessary, you can use the grill during the last 8-10 minutes of cooking.
The broccoli flatbread is ready, let it cool for a few minutes before cutting and serving it… enjoy your meal!
Tips and Notes
You can replace broccoli with cauliflower, and you can add speck or ham cut into thin strips.
To cook well, the flatbread must be thin. If you don’t have a large enough baking sheet, reduce the doses proportionally, or divide the dough into two sheets.
Adjust the temperature and times according to the features of your oven.
You can use flour 0 or flour 1 instead of all-purpose flour.
