Ingredients

  • 1.75 lbs cleaned pumpkin
  • 1 cup water
  • 1 cup sugar
  • 0.21 oz agar-agar
  • 1 orange zest
  • to taste chopped pistachios

Preparation

Remove the skin and seeds from the pumpkin, cut it into pieces, and place it in the blender with the water.

Blend finely, pour into a saucepan, add the sugar and grated orange zest, and mix.

Add the natural thickener and incorporate it with the other ingredients. Put it on the stove over medium heat, and as soon as it starts to boil, count 3 minutes of cooking to activate the agar-agar.

Pour the mixture into a mold, level it, and let it cool at room temperature. At this point, cover with plastic wrap and place it in the refrigerator to set for at least two hours.

After the necessary time, flip the slab onto a cutting board or plate, sprinkle with chopped pistachios, and divide into small squares.

Advice

We can store pumpkin jellies in the refrigerator for several days, but inside an airtight glass container.
