I love vegetables, my favorites are zucchini. And what better season than this to cook them??
Today I prepared them simply but deliciously with eggplants, we are crazy about them at home. And they are great both hot and cold. So perfect to eat even at the beach. For cooking, I preferred the air fryer but you can easily use the oven or microwave.

Ingredients
- 2 dark green zucchini
- 2 black oval eggplants
- to taste extra virgin olive oil
- to taste minced garlic and parsley
- to taste salt
Tools

Steps
Wash the eggplants and zucchinis thoroughly, cut off the ends, and chop them into small pieces.
Pour into a mold (I use the one that comes with my air fryer) and season with a little oil and salt.
Cook for 20 minutes at 392°F
Then season with a mixture of oil, garlic, and parsley.
