Bread with Durum Wheat in the Multicooker

The bread with durum wheat in the multicooker, warm, fragrant, and crunchy on the outside, soft on the inside just like oven-baked.

The durum wheat bread in the multicooker is made with the dough rising directly in the pot, you can also let the dough rise in the traditional way, that is, in a bowl covered with plastic wrap or placed in the oven with the light on and then bake it in the multicooker.

For this recipe, we used the programmable pot from Cecotec GM model H DELUX, a pot with a capacity of 6 liters, non-stick basket, flip-top lid, 16 menus, a true ally in the kitchen.

Ingredients for the bread with durum wheat in the multicooker:

  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups durum wheat flour
  • 1 cup lukewarm water
  • 1 1/4 tsp dry yeast
  • 1 1/4 tsp fine salt
  • 1 tsp granulated sugar

Steps for preparing and cooking the bread in the multicooker:

  • In a bowl put the lukewarm water, dry yeast, and granulated sugar, stir well and let it rest for 10 minutes.

    Then gradually add the two sifted flours to the bowl and start stirring the ingredients with a spoon, when they begin to mix, add the salt.

    Transfer the mixture onto a floured board, knead it well until you get a smooth and homogeneous dough, shape it into a loaf.

  • Line the base of the multicooker bowl with parchment paper, place the dough, put the lid, close the valve, and set the ferment program for 60 minutes.

  • After the time, check the leavening, which should be almost doubled, otherwise continue with the ferment program for 10/15 more minutes.

  • Make cuts on the surface of the loaf.

    Attention: if you want a bread with the classic loaf shape and not with the bowl shape, remove the dough from the bowl and shape it into a loaf, then make the cuts and put it back in the bowl with parchment paper at the base.

  • Put the lid on the multicooker pot, valve open, OVEN menu at 284°F for 40 minutes.

    Then turn off the pot and put the oven lid for 10 minutes at 392°F.

    If you do not have the oven lid, continue cooking for another 10 minutes reaching 50 minutes in total.

    Cooking with the oven lid allows for browning on the upper part of the bread just like in the oven.

  • Remove the bread, place it on a wire rack, and let it cool before consuming it.

Advice:

You can also use a different dough, made with only all-purpose flour or whole wheat or spelt flour.
