Ingredients
- 11 oz pasta (short shapes like casarecce, penne, rigatoni or fusilli)
- 5.3 oz smoked bacon (cubed or sliced)
- 1/3 onion (finely chopped – optional)
- 7 oz scamorza cheese (mild or smoked)
- 7 oz cooking cream
- to taste extra virgin olive oil

Steps
First, place a pot on the stove with plenty of water and bring it to a boil. When the water boils, add the pasta (I used casarecce) and cook it for at least 10 minutes (according to the package instructions).
Meanwhile, in a non-stick pan, add a drizzle of extra virgin olive oil and the finely chopped onion. Sauté gently over low heat until the onion is golden and translucent. Add the bacon, slightly raise the heat and let it brown until it becomes crispy and golden.
Remove the bacon and set it aside. In the same pan, over low heat, pour the cooking cream. Cut the scamorza cheese into small cubes and add it to the cream; stir until the scamorza has completely melted, creating a creamy and stringy sauce. Turn off the heat and add the bacon.
Once the pasta is cooked, drain it al dente, reserving a ladle of cooking water. Transfer the pasta directly into the pan with the sauce, turn the heat to medium and stir well to combine all the ingredients.
Note: If the sauce is too thick, add a tablespoon or two of the reserved pasta cooking water.
Serve the pasta immediately, garnishing as desired with a sprinkle of grated Parmesan and thyme (or fresh chopped parsley).

You can store the Pasta with Scamorza and Bacon in the refrigerator for up to 1-2 days, in an airtight container.

If you’re in a hurry, you can reheat the pasta in the microwave, covered, at 1-2 minute intervals, stirring each time. This method tends to dry out the dish more, so you might still need to add a bit of liquid.
