Rice with canned beans and bacon. A simple and quick first course to prepare, great both hot and cold.
The rice with canned beans is very simple to prepare. It’s a super quick recipe. As I mentioned, it’s a great dish both hot and cold. If you leave it more brothy, it will turn out to be a hot and creamy first course. If you prefer it cold as a salad, just let all the liquids evaporate.
It’s a perfect and well-balanced dish to take out of the house, in fact, I prepared it for my husband who often has lunch at work.

Ingredients
- 2/3 cup rice
- 1 canned borlotti beans
- 2/3 cup tomato sauce
- 1 tbsp extra virgin olive oil
- to taste salt
- to taste water
- 1.75 oz smoked bacon

How to Prepare Rice with Canned Beans and Bacon
Rinse the beans well and let them drain.
In a saucepan, add the oil, two teaspoons of soffritto mix, and the bacon. Let it brown slightly for a few minutes. (I used frozen soffritto mix, but you can use fresh carrots, celery, and onions).
Add the well-drained beans.
Let them flavor for a moment, then cover them with water.
Add the tomato sauce.
Cook for about 10 minutes over high heat. (As I mentioned in the introduction, you can choose whether to prepare the sauce more or less dry). At the end of cooking, adjust the salt.
In another saucepan, bring the water to a boil. When boiling, salt it, then add the rice. Cook the rice for the time indicated on the package.
Drain the rice and add it to the sauce. Mix.
The dish is ready.
