Ingredients for Heart Surprise Roll Cake
- 3/4 cup all-purpose flour
- 1 teaspoon wildflower honey
- 1/4 cup unsweetened cocoa powder
- 2/3 cup Sugar
- 3 tbsp skim milk (or whole milk)
- to taste sugar (for sponge cake)

- 1 teaspoon baking powder
- 1/2 cup pistachio crumbs
- 4 Eggs
- 2/3 cup flour
- 1/3 cup Sugar
- 1 packet vanillin
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- to taste red food coloring (powder or gel)
- 1 1/2 cups heavy whipping cream
- 1 teaspoon vanilla extract
- to taste powdered vanilla sugar

After preparing the cocoa sponge cake batter, add the pistachio crumbs, mix well, and bake. Once ready, remove from the oven and roll it up, let it cool.
In the meantime, start preparing the colored sponge cake; add the red coloring to the batter, adjust the shade as desired. This step should be done when the flour is added.
Once the red sponge cake is ready, remove it from the oven and let it cool, then use a heart-shaped cutter to cut out the red hearts. Once the bases are ready, whip the cream with powdered sugar and vanilla extract, it should be very firm.
Now we can start assembling the roll cake with heart: unroll the cocoa sponge cake and spread the cream on top, leveling it well. Take the red hearts and place them next to each other, forming a log. If there is any difficulty in keeping them in place, brush a thin layer of honey between each heart.

Place the heart log in the middle of the roll and gently roll the sponge cake back onto itself. Be careful how you position the hearts and how you roll the sponge cake, otherwise you won’t have the heart effect on every slice.
Seal the roll with plastic wrap, closing well at the sides, otherwise the sponge cake could dry out.
Once ready, let it rest in the fridge before cutting, a minimum of 5/6 hours, but preferably overnight. Finally, before serving, decorate with powdered sugar and some small hearts.
