Today I made Fried Dumpling, I didn’t use homemade lard as I usually do, but rather olive oil. The result was still excellent, my guests appreciated it.
I served them with a nice platter of cured meats and cheeses, really spectacular. In short, you will make a great impression with your friends at the table, try them yourself and see if I’m right!!

Ingredients
- 2 cups all-purpose flour
- 2 cups re-milled durum wheat semolina
- 1 1/4 cups water
- 2 tsps salt
- 1 tsp sugar
- 3 tbsps extra virgin olive oil
- 10 g fresh yeast
- to taste oil for frying

Steps
In the bowl of the stand mixer, dissolve the yeast with the water and sugar.
Add the flour and semolina and start kneading.
Add salt and oil and continue kneading for at least 15 minutes.
Transfer to the work surface, the dough will be very soft, but do not add flour. Form a ball and let it double in size.
Once the dough has risen, transfer it to the work surface and divide it into two parts. Roll them out with a rolling pin and use the pastry cutter to cut small diamonds.
Fry in hot oil, drain on absorbent paper, and serve with cold cuts and cheeses.
