I really wanted a fresh dessert and super quick to prepare, something creamy but also light, perfect for these hot days… so I thought of some coconut tiramisu in single-serving version!
A simple idea, no baking, ready in just a few minutes, perfect if you’re craving a summer spoon dessert. I used classic ladyfingers soaked in coconut milk (you can also use regular milk or coffee if you prefer), alternated with a cream made with ricotta or mascarpone, whipped cream and grated coconut.
The result? A creamy coconut tiramisu, fragrant and irresistible. You can serve it in individual glasses, perhaps with a sprinkle of cocoa or grated coconut for decoration.
It is the ideal dessert for a delicious end of meal or a fresh summer snack. Perfect to prepare in advance, so it sets well in the fridge and becomes even better!

Ingredients
- 8.8 oz ricotta (or mascarpone)
- 1 cup heavy cream
- 2 tablespoons grated coconut
- 2 tablespoons powdered sugar
- 1 teaspoon coconut oil (optional)
- ladyfingers
Steps
In a bowl, mix the ricotta with the powdered sugar and grated coconut. Add the coconut oil if using and the cream, and whip it all together.
Dip the ladyfingers quickly in milk or coconut milk (do not let them become too soft)
Alternate layers of dipped ladyfingers and coconut cream in 4 glasses or small bowls. Finish with a layer of cream.
Decorate with grated coconut and, if you like, a shard of white chocolate or a slice of dried coconut.
Chill in the fridge for at least 30 minutes before serving.
