The MICROWAVE PESTO OMELET, an easy and quick recipe perfect for any occasion.
The recipe is for a single serving, you can also increase the number of eggs to make an omelet suitable for the whole family.
If you make a larger omelet, we recommend using the crisp plate for cooking, which allows you to get a golden finish like in the oven, in this case use the micro+grill or combined cooking program.

- 2 medium eggs
- 1 tablespoon Genoese pesto
- 1 tablespoon grated Parmesan cheese
- 1 teaspoon extra virgin olive oil

Preparation and cooking steps for the microwave pesto omelet:
In a bowl, place the eggs, pesto, and grated Parmesan cheese, do not add salt as the ingredients used are already salted.
Beat the ingredients well with a fork to obtain a smooth and homogeneous mixture.
In a microwave container, we used a rectangular container 9.45×4.92 suitable for cooking eggs, place a scant tablespoon of oil and use a silicone brush to spread it over the entire surface.
Pour the egg mixture and close the container.
Cook for 5 minutes at 600W (using classic microwave cooking) then let it rest for 1 minute.
Serve your single-serving omelet on a serving plate accompanied by a portion of mixed vegetables.
The omelet is excellent both hot and at room temperature.
If you like, you can make a sandwich with the omelet, using bread or focaccia.
Notes
If you love stronger flavors, you can replace grated Parmesan with Pecorino cheese.
You can also add more pesto according to your taste.
