They brought me some fresh organic eggplants from the garden, and I couldn’t resist taking advantage of it! I prepared them in a pan with black olives and my beloved salted capers, which I prepare every summer with those grown by my neighbor in the dry stone walls of the garden… a real tradition!
The pan-fried eggplants with olives and capers are a quick side dish, light and full of flavor, perfect to accompany meat or fish dishes, but also great to serve with toasted bread or inside a wrap. It is a Mediterranean recipe, gluten-free, lactose-free, vegan and vegetarian, which is prepared in a few minutes with simple but genuine ingredients.
To make them even more fragrant, I added garlic, oregano, and cherry tomatoes. If you like light summer dishes, this one is also perfect to serve cold or the next day: the flavors will be even more intense!
A tasty idea, also ideal as a cold appetizer, for a summer lunch or a quick dinner.

Ingredients
- 2 eggplants
- 20 black olives
- 2 tablespoons salted capers
- 1 clove garlic
- 5.3 oz cherry tomatoes
Steps
Cut the eggplants into cubes not too small, place them in a pan with oil, a clove of garlic, and cook for a few minutes.
Gradually add the capers, olives, and finally the cherry tomatoes, canned or fresh, as you prefer.
Add a few basil leaves and cook for about 35 minutes, stirring them from time to time. Serve with a sprinkle of oregano.
