Homemade Mini Pizzas with Zucchini and Squash Blossoms

Homemade mini pizzas with zucchini and squash blossoms are soft and cheesy, easy to prepare, and delicious. They are soft mini pizzas made with the classic pizza dough of flour, water, yeast, oil, and salt. Once risen, we divide it into balls and after a second rise, we roll them out and top them with cream, raw zucchini, squash blossoms, and mozzarella. This is how delicious mini pizzas are born, fresh from the oven and also great cold, perfect for Saturday night dinner, as an appetizer, or at any time of the day, both at home and out!

Prepare the mini pizzas by hand or with a stand mixer by crumbling the yeast well into the flour and initially adding half of the water. Start kneading and gradually add the remaining water and oil. Lastly, add the salt and knead until you get a soft and homogeneous dough. Let it rest for 20 minutes, then do a few strengthening folds, cover, and let it rise for about two hours in the turned-off oven. Take the dough again and divide it into eight balls of about 3.5 oz each, give them some folds and let them rise for another hour well covered. In the meantime, slice the zucchini thinly with a mandoline and season them with lemon juice, oil, mint, salt, and pepper. Roll out each dough ball with your fingertips and top them with a tablespoon of cream, oil, and zucchini. Bake at 425-445 degrees for about 8-10 minutes on the bottom of the oven. Add the cleaned squash blossoms and mozzarella and bake for another 5 minutes in the middle of the oven until the mozzarella is well melted.

How to Prepare Homemade Mini Pizzas with Zucchini and Squash Blossoms

  • Let’s prepare the homemade mini pizzas with zucchini and squash blossoms, starting with the dough, which can be made either by hand or with a stand mixer: first, crumble the yeast into the flour.
    Add half of the water and start kneading with a spoon if kneading by hand or mixing with the K-beater. As you knead, gradually add the remaining water, waiting to add more until the previous portion is perfectly incorporated.

  • Add the salt and oil and continue kneading until you obtain a smooth, homogeneous, and compact dough.
    Transfer the dough to an oiled bowl and, after 20 minutes, perform a couple of strengthening folds directly in the bowl. Let the mini pizza dough rise in the turned-off oven, covered, for about 2 hours or until it doubles in volume.

  • Turn the dough onto a work surface dusted with semolina flour, divide it into 8 balls of about 3.5 oz each, fold them a few times, shape them into rounds, and let them rise again for another hour, covered.

  • Meanwhile, trim the zucchini and slice them thinly with a mandoline.
    Season them with oil, lemon juice, mint, salt, and pepper.
    Clean the squash blossoms by gently washing them and removing the stem and pistil. Cut them into strips.

  • Shape the mini pizzas by gently spreading them with your fingertips from bottom to top without flattening them excessively.

    Bake them in a preheated 425°F oven for 8-10 minutes on the lower part of the oven.
