Asparagus with Melting Eggs

Ingredients

  • 10.5 oz asparagus
  • 4 eggs
  • 2 slices cooked ham
  • 2 slices of processed cheese
  • 1.5 tbsp butter
  • to taste salt
  • to taste seed oil

Steps

  • Clean the asparagus by removing the light and woody part, then wash them under running water.

  • Boil the asparagus for about 5/7 minutes in a wide pan with salted boiling water. They should be soft but still crunchy.

    Once ready, strain them and divide them into 4 plates.

  • Melt the butter in a non-stick pan.

    Break 2 eggs into a small bowl and gently pour them into the pan. Salt to taste and cook for about 3/4 minutes.

  • Place a slice of ham and a slice of cheese on the eggs and cover with a lid.

    Continue cooking for about 1/2 minutes until the cheese melts.

  • Shake the pan to detach the eggs, and gently let them fall on the asparagus.

    Repeat the same operation with the remaining 2 eggs.

The asparagus, if not in contact with the eggs, can be stored in the fridge for 2 days.
