Bundt Cake with Yogurt and Coconut


For this homemade bundt cake with yogurt and coconut, I chose to decorate it with a simple glaze made with powdered sugar and water, adding some sugar sprinkles to color and embellish the cake.

Inside, besides the coconut flour, I also added some coconut milk to this soft cake which can be found in the ethnic food sections of all supermarkets now…

If you prefer, dust the coconut and yogurt cake with powdered sugar, and if you want to enhance the coconut flavor, use a yogurt with this exotic taste.

A keen eye will notice that the inside of the bundt cake is a bit crumbly, and that’s because despite thinking I had organized the kitchen after the renovation, I couldn’t find ANY bundt pan of 9/10 inches, so I had to put an upside-down glass in the “normal” pan to make the hole!!!!

Is it possible to still have this mess in the house??????????????????????????

I applied the glaze using a piping bag, but as always, do according to yourmodus operandi (this morning I have the Treccani in my mouth ah ah)

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup coconut flour
  • 3/4 cups sugar
  • 3 eggs
  • 1/2 cup plain natural yogurt
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup coconut milk
  • to taste powdered sugar
  • to taste water (a little)
  • to taste colored sprinkles

FOR THE PREPARATION OF THE RECIPE BUNDT CAKE WITH YOGURT AND COCONUT

  • Beat the eggs with the sugar, using either the stand mixer or the electric beaters, for at least 10 minutes to obtain a light, frothy, and soft mass.

    At low speed, add the plain yogurt, the vanilla extract, the sifted flour with the baking powder alternating with the coconut milk.

    Also add the coconut flour and mix well, incorporating the mixture of the bundt cake prepared with coconut and yogurt.

  • I have already preheated the oven (a step that should be done as soon as you read the recipe and prepare the ingredients clearly) to 350°F in static mode and greased with butter and flour or with the appropriate spray my bundt pan.

  • Pour the mixture into the pan and bake for about 45/50 minutes, but as always, check and ensure proper cooking with a wooden skewer.

  • While the cake bakes, I prepare the royal icing.

    In a bowl, I put 4/5 tablespoons of powdered sugar and carefully add a tablespoon of water, mix vigorously, and add drop by drop more water if needed to have a creamy but not too fluid consistency!

  • Once baking is completed, I let the coconut and yogurt bundt cake cool, preferably on a specific rack.

    Warm or cold, I decorate with the icing and as I place it on the cake, I add the sprinkles which will therefore attach to the powdered sugar and water cream.

    Here is a cake that is not too sweet, with a pleasant and delicate taste, perfect for breakfast and family snacks!

VARIATIONS

Recapping, for preparing the cake with coconut and yogurt… we can use plain natural yogurt, thick Greek yogurt, coconut yogurt, and we can serve the cake decorated with glaze or powdered sugar but also accompanied by custard naturally without flour.
